The COVID-19 pandemic has forced Colorado eateries, breweries, and coffee shops to get creative in expanding their outdoor dining spaces. Restaurant owners have come up with many unique ideas that seem to vary wildly from spot to spot, including everything from heated igloos to greenhouse structures stringed in lights to private tipis. Here are some of the most creative options for dining outdoors this winter around the state.
